Hawaij

Recipe

Hawaij is a common spice used in many Yemenite recipes, specifically for barbequed foods, meat rubs, and soups. You can buy it in most Middle Eastern grocery stores or prepare it using proportions to meet your taste.

Ingredients:

• 6 1/2 tablespoons freshly ground black pepper
• 1/4 cup cumin seed
• 2 1/2 tablespoons coriander seeds
• 1 1/2 tablespoons green cardamom
• 1 1/2 teaspoons whole cloves
• 3 1/2 tablespoons turmeric

Directions:

1. Place cumin, coriander, cardamom, cloves and pepper into a frying pan. Fry without oil for 2-4 minutes.
2. Remove from heat and allow to cool.
3. Grind using a coffee grinder or mortar & pestle. Add the turmeric. Mix well, place in a tightly-sealed container, and let sit in a cool, dark place for up to three weeks.
